Yesterday, my wife invited some friends and relatives over for lunch.  

She made a cheesecake.  But, here’s the thing.  She made it from cashews.  I suppose she should have called it cashewcake.  

No one complained.  Quite the opposite.  Everyone was really enjoying it.  They didn’t know it was made from cashews.  Because… she didn’t call it cashewcake.  

When she told everyone what she had done, they were stunned.  They were stunned because plant-based desserts aren’t supposed to taste good.  But, it did.  It really did.  

Everyone wanted to know why my wife was making cheesecake from cashews.  She does stuff like that for me.  I don’t eat meat or dairy.

Naturally, our guests wanted to know why I don’t eat meat or dairy.

There are lots of reasons, of course.  Too many to go into here.  But, here is one of the big ones.  

Years ago, when it first came out, my wife and I watched the documentary Forks Over Knives.  Several medical doctors in the documentary, make a very compelling case.  They claim we can drastically improve our health, and even reverse disease by doing what our mothers have been telling us to do all along.  “Eat your veggies!”

Classes are back.  Starting early tomorrow morning.  

It is possible there will be no classes on Thursday, October 24.  I may be on the road again.  If that happens, I will teach the Thursday classes on Wednesday, October 23.  

Just a reminder, because of fall break (last week), classes will no longer end at the end of April.  I will extend classes into the first week of May, and likely beyond.
